A comprehensive F&B plan will be created and reviewed regularly. Creative concepts for food offerings will be recommended that reinforce the positioning of the property in the marketplace.
In a luxury lifestyle hotel, food is an integral and essential element of the property concept. World-class cuisine is a given in the mind of luxury lifestyle hotel clients. In addition, food and beverage can be a lucrative profit center.
Recruiting, training and managing skilled kitchen staff will be a priority. Purchasing specifications, procedures and standards will be established and enforced. Costs will be analyzed, goals established and controls implemented. Kitchen and wait staffing labor controls will be carefully analyzed, and budgets established. Service standards, as well as product and tabletop presentations will be reviewed regularly and training will be ongoing. Training will incorporate quality service and methods to maximize guest food expenditures with effective and friendly up-selling.
